THE Corner Mountain Peach Pancakes 🥞

I believe that my food should feed me and breakfast is my favourite meal.  So, I love to create special recipes for my B&B guests.  This recipe is a favourite at the Inn. Using locally sourced ingredients (including some from our own garden!) paired along with traditional cooking methods allows for our breakfasts to be Wellness Inspired and to create the fuel you need for your daily adventures. Choosing wellness can be very delicious! 6-8

I use a Vitamix blender and the freshest organic ingredients possible.  Enjoy.

Serves 6-8 Pancakes

Ingredients:

  • 3 large fresh peaches

  • 2 tbsp. coconut oil

  • 2 tbsp. maple syrup

  • sprinkle of cinnamon 

  • 6 large eggs

  • 1 cup ground almonds

  • 1 cup coconut/almond milk


Melt the coconut oil in a 12 inch oven ready frying pan.  Peel and slice the peaches into the pan and add the maple syrup.  Sauté until the syrup is bubbling and sprinkle with cinnamon.Grind the almonds.  Add the eggs and milk, blending until smooth.  Pour mixture over the bubbling peaches and place in a 425 oven and bake for 25 minutes. Serve hot with a dollop of yogurt and fresh fruit.
